  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 2 tablespoons olive oil
  • For the Flautas:
  • 10-12 small corn tortillas
  • Cooking spray or vegetable oil for frying

  • Shredded lettuce
  • Diced tomatoes

Recipe Instructions: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for 2-3 minutes until they start to soften. Add the shredded chicken, corn, and black beans to the skillet. Season with chili powder, cumin, salt, and pepper. Stir well and cook for another 2-3 minutes until everything is heated through and well combined. Remove the skillet from the heat and stir in the chopped cilantro (if using) and half of the shredded cheese. The cheese will help bind the filling together. Preheat your oven to 375°F (190°C). To assemble the flautas, warm the corn tortillas in the microwave for about 20 seconds, so they are pliable and don't crack when rolled. Place a portion of the chicken mixture in the center of each tortilla, then roll it tightly like a cigar, securing the seam side down. Place the rolled flautas seam side down on a baking sheet lined with parchment paper. If you want a crispy texture, lightly spray the flautas with cooking spray or brush them with a small amount of vegetable oil. Bake in the preheated oven for about 15-20 minutes, or until they are golden and crispy. Remove the flautas from the oven and sprinkle the remaining cheese on top. Return them to the oven for a few more minutes until the cheese is melted and bubbly. Serve the chicken flautas with your choice of toppings like salsa, sour cream, guacamole, shredded lettuce, and diced tomatoes.
