Recipe Instructions: Prepare the Tortilla Chips: Cut the corn tortillas into wedges or strips. Heat the vegetable oil in a large skillet over medium-high heat. Fry the tortilla pieces in batches until they are crispy and lightly browned. Remove and drain them on paper towels. Sprinkle with a pinch of salt. Sauce the Chilaquiles: In the same skillet, add the diced onions and sauté them until they become translucent. If you're using shredded chicken, add it to the skillet and sauté for a few minutes to heat it through. Pour the red or green salsa over the onions and chicken (use more or less depending on your preference for sauciness). Let the mixture simmer for about 5-10 minutes, allowing the flavors to meld.
