Prepare the Sauce: In a blender or food processor, combine the minced garlic, chopped onion, chipotle peppers, ground cumin, dried oregano, ground cloves, ground cinnamon, beef broth, and apple cider vinegar. Blend until the mixture is smooth. Cook the Beef in the Sauce: Place the seared beef in a slow cooker or a large pot. Pour the sauce over the beef. If using a slow cooker, cook on low for 6-8 hours or until the beef is tender and can be easily shredded with a fork. If using a stovetop, simmer on low heat for 2-3 hours, stirring occasionally, until the beef is tender. Shred the Beef: Once the beef is cooked and tender, remove it from the pot or slow cooker, and use two forks to shred it into bite-sized pieces. Reduce the Sauce: If you're using a stovetop method and the sauce is too thin, you can simmer it for a bit longer to thicken it up. If you used a slow cooker, you might need to transfer the sauce to a pot and reduce it on the stovetop. Add Lime Juice: Stir in the fresh lime juice to brighten up the flavors.
