Measure your butter and let it soften at room temperature
Thinly slice the cabbage and your bacon/pancetta in squared pieces
Chop onions and garlic cloves as small as possible
Cook
Cook your bacon in a large skillet over medium heat until crisp, about 6-7 minutes
Remove the bacon from the skillet, leaving all the grease on the pan.
In the same pan, add the diced white onion and cook until translucent, about 3 minutes.
Add the chopped cabbage into the skillet with the onion. Add 1 tablespoon of ground mustard, 1 teaspoon of smoked paprika, and 1 teaspoon of salt. Cabbage is sautéed for about 7 minutes, until buttery tender!
Transfer the bacon back into the pan and stir together with the cabbage.
Garnish with more paprika on the top and some parsley. Serve hot with some chips on the side!
