Ingredients
- 4 russet potatoes thinly sliced
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ½ cup cooked bacon crumbled
- ¼ cup green onions chopped
- ½ cup sour cream
- ¼ cup diced tomatoes (optional)
- ¼ cup jalapeños, sliced (optional)
- ¼ cup Guinness beer cheese sauce (optional)
Instructions
- Preheat Oven – Set to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare Potatoes – Wash and slice potatoes into thin rounds (about ¼-inch thick).
- Season & Bake – Toss potato slices with olive oil, salt, black pepper, garlic powder, and paprika. Arrange in a single layer on the baking sheet and bake for 20-25 minutes, flipping halfway until golden brown.
- Add Cheese & Bacon – Remove potatoes from the oven, sprinkle cheddar and mozzarella cheese over them, then add crumbled bacon.
- Melt the Cheese – Return to the oven for 5 minutes until cheese is fully melted.
- Top & Serve – Garnish with green onions, sour cream, diced tomatoes, and jalapeños. Drizzle with Guinness beer cheese sauce for extra flavor. Serve immediately!
