Recipe Instructions: Prepare the Dough: In a medium saucepan, combine the water, sugar, salt, and 2 tablespoons of vegetable oil. Bring the mixture to a boil over medium heat. Remove the saucepan from the heat and stir in the flour until the mixture forms a ball of dough. Heat enough vegetable oil in a large, deep pot or deep fryer to reach 375°F (190°C). Pipe the Churros: Transfer the dough to a piping bag fitted with a large star tip. Pipe strips of dough into the hot oil, cutting them to your desired length using a knife or scissors. Fry the Churros: Fry the churros until they are golden brown, about 2-4 minutes per side. Use a slotted spoon to remove the churros from the oil and place them on a plate lined with paper towels to drain excess oil. Coat the Churros: In a separate bowl, mix together the 1/4 cup of sugar and 1/2 teaspoon of ground cinnamon. Roll the warm churros in the cinnamon-sugar mixture to coat them evenly.
