  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup low-sodium chicken or vegetable broth

  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano

Recipe Instructions:

Lightened-Up Turkey Chili:

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, garlic, and ground turkey. Cook, breaking up the turkey with a spoon, until it's no longer pink and the onion is translucent. Stir in the chili powder, ground cumin, paprika, oregano, salt, and pepper. Cook for a couple of minutes to toast the spices and enhance their flavor. Add the chopped bell pepper and zucchini. Sauté for about 5 minutes, or until they start to soften. Pour in the diced tomatoes and chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15 minutes, uncovered, to allow the flavors to meld. Add the drained and rinsed black beans and kidney beans. Simmer for an additional 10-15 minutes, or until the chili thickens to your desired consistency. If it gets too thick, you can add more broth or water to reach your preferred thickness. Taste the chili and adjust the seasonings if needed. You can add more chili powder, cumin, salt, or pepper to suit your taste. Serve the lightened-up turkey chili hot, garnished with your choice of toppings such as shredded cheese, chopped green onions, or a dollop of plain Greek yogurt.
