For Cranberry Brie Bites, you can use store-bought crescent roll dough for a quick and convenient preparation. Look for refrigerated crescent roll dough in the supermarket.
– 1 (8-oz.) tube crescent dough – Cooking spray, for pan – Flour, for surface – 1 (8-oz.) wheel of brie – 1/2 c. whole berry cranberry sauce – 1/4 c. chopped pecan – 6 sprigs of rosemary, cut into 1" pieces.
Heat the oven to 375°F and coat a mini muffin tin with cooking spray. Roll out crescent dough on a lightly floured surface, ensuring seams are pinched together. Then, cut the dough into 24 squares and position them in the slots of the muffin tin.
Dice the Brie into small pieces and position them within the crescent dough. Add a spoonful of cranberry sauce, some finely chopped pecans, and a small sprig of rosemary on top.
Bake until the crescent pastry turns a golden color, which usually takes around 15 minutes.
