3 pounds of assorted potatoes, including russets and Yukon golds, peeled and diced into 1-inch pieces
Kosher salt
1/2 cup of sour cream at room temperature
1/2 cup of whole milk
3/4 cup (equivalent to 1 1/2 sticks) plus 2 tablespoons of unsalted butter
Freshly ground black pepper
Chopped fresh parsley for serving

Boil potatoes in a large pot with salted water until softened, about 15-20 minutes.

After cooking, drain the water and return the potatoes to the pot. Utilize either a potato masher or ricer to achieve a smooth consistency.
